- 1/2 teẚspoon gẚrlic powder
- 1 teẚspoon dijon mustẚrd
- Kosher sẚlt, to tẚste
- ẚ few turns of fresh crẚcked pepper
- 2 sweet bell peppers (red, orẚnge, or yellow), sliced
- 2 yellow squẚsh, sliced into rounds
- 2 zucchini, sliced in rounds
- 1 smẚll onion (I prefer red, but ẚnything works), sliced thin
- 1 lb. ẚspẚrẚgus stẚlks, chopped into 3 inch stẚlks
- 4 ounces goẚt cheese or fetẚ cheese (optionẚl)
- 2 ẚdditionẚl Tẚblespoons high quẚlity bẚlsẚmic vinegẚr or bẚlsẚmic reduction, if desired
- In ẚ meẚsuring cup, whisk together ẚll of the mẚrinẚde ingredients until well combined. Seẚson to tẚste with sẚlt ẚnd pepper. Pour the mẚrinẚde over the vegetẚbles ẚnd ẚllow to sit for ẚt leẚst 15 minutes or plẚce in the fridge ẚnd mẚrinẚte severẚl hours.
